Beefy Nachos

I made this last week as a ghetto meal. I was then told that it was in fact, NOT ghetto and I needed to make it again....soon.

Ingredients:
1lb ground beef, 1 packet taco seasoning, tortilla chips, 1 can of black beans, 1 can of petite diced tomatoes, 1 bag of shredded nacho/taco blend cheese


Throw the meat into a skillet.


Cook it until it's nice and browned.


Add some water (However much it says on the seasoning packet. Mine called for 3/4 cup)


Then add the taco seasoning.


Mix that together and then add the canned tomatoes.


The meat is done and ready for nacho making!


OK....this is my PC Stoneware Bar Pan. Another one of my great loves in the kitchen. Isn't it pretty? I'm working on getting it nice and seasoned...thus the dirty look to it.


OK...dump the chips onto the bar pan. *You can totally use a cookie sheet, but I prefer the stone. Nothing burns to it and it keeps the nachos nice and warm while you eat your first serving...there WILL be seconds. :)


Next, drain and rinse your black beans. Put them on top of the chips.


Add some cheese.


Put the meat on top.


Aaaaaaaand some more cheese.


You can really add whatever you want...olives, jalapenos, green onions.  I left it at this.

Bake in a 350 degree oven for 15 minutes.

And that's it!

  1. Mmmm... this might make it onto next week's menu! I'm thinking maybe ground turkey instead of beef. What do you think?

    If you want to cut back on the sodium - SP has a recipe for "Taco Seasoning Replacement" - Once the rest of my kitchen stuff gets here - I am going to make a batch of this stuff up. Apparently 3 Tbsp = one envelope of the pre-mixed stuff.
