I threw these together with some leftover <a href="http://happyhomefairy.com/2013/05/14/recipe-crockpot-salsa-chicken/">Crock pot Salsa Chicken</a> and whatever else I could find in the kitchen that sounded good. The chicken, by the way, is SO good. I usually make a bunch of it for tacos and freeze the leftovers. <br />
These flautas are really light and quick to make.<br />
<br />
<strong>Baked Chicken Flautas</strong><br />
<br />
10 med size flour tortillas<br />
2 cups crock pot chicken<br />
1/2 cup sour cream<br />
1 can black beans<br />
1 can corn<br />
avocado (1 or 2 depending on how much you love avocado)<br />
Crumbled Cotija cheese (about a cup or so)<br />
<br />
<br />
Preheat your oven to 350 degrees.<br />
Mix the chicken, sour cream, beans and corn in a large bowl.<br />
Spoon the filling onto the tortillas, sprinkle some Cotija cheese on top and add a few slices of avocado.<br />

Roll them up and secure with a toothpick.<br />
Spray a baking sheet with cooking spray and place the flautas seam down.<br />
Lightly spray the flautas with a bit of cooking spray. This will help the tops crisp up.<br />
Cook them for about 30 minutes.<br />
<br />
Serve them with some sour cream or salsa. Enjoy!<br />

Ingredients<br />

3 (4oz) cans whole green chilies (you need 8-10 chilies)<br />
muenster cheese<br />
1 1/2 cups beaten eggs (I use the already beaten stuff from Costco)<br />
1/2 cup flour<br />
1/2 cup milk<br />
1 cup shredded cheddar cheese<br />
1 tsp chili powder<br />
1/2 tsp paprika<br />
1/2 cup diced green onions<br />
sour cream<br />
salsa<br />

Spray a 9x13 baking dish with cooking spray. </div>

Cut slices of muenster cheese and stuff each pepper with it. You can do as much or as little as you like. I FILL them. Don't worry if the chili splits with the cheese in it. Arrange the chilies in the baking dish.</div>

Mix the eggs, milk, flour & paprika together and pour over the chilies.</div>

I'm here and still cooking! SO much has changed in the past 2 years. My little family has been through a lot. In Jan of '12 my husband was informed that his company had lost their contract and pretty much everyone would be out of a job within 3 months. Awesome, right? 2 months later we rented out our home sweet home in CO, packed up everything we had and moved to Utah. Moving is never an enjoyable experience, but you do what you can to settle in and make your new location your home. 2 weeks to the day that we arrived in UT, we received some life shattering news. My father-in-law had passed away suddenly and unexpectedly. The next year was filled with many trips home to CA to be with family and to take care of as much as we could. We also came uncomfortably close to losing our Colorado home to a terrible fire that destroyed so much of our beautiful mountain town. It was a very stressful year for us, to say the least. Since then we've moved AGAIN (and hopefully the last time for a while) to a new house in Utah.</div>

Let them saute for a couple minutes. Then take the shrimp, mushrooms, onion & garlic...toss them together in a bowl with about 2 Tbsp of olive oil. Add 1 can of Italian diced tomatoes (drain them as much as you can). Last, toss in 1/2 cup of Parmesan cheese & 1/2 cup of feta cheese. </div><div class="separator" style="clear: both; text-align: center;"><br />

Being only 9 when we traveled there, my memories are few. I do remember the food though. There are a few meals that really stick out to me. One was a paella that was cooked outside by a gypsy over an open flame. I don't know what all was in it, but I remember how GOOD it was. The other dish that we had quite a few times was Butifarra and beans. Butifarra is a sausage that is practically unheard of here in the States. It's a basic white sausage, not much to it...meat, salt & pepper. What makes it special is the type of pork that it's made from. Since we don't have it readily available here, I went with a beef smoked sausage instead.</div><div class="separator" style="clear: both; text-align: center;"><br />

As soon as I saw them I thought, I bet they'd be amazing with some coconut in them somewhere. So anyway, on the bottle it says to mix 1/2 cup of it with 3 Tbsps of peanut butter and you'll magically have a Thai peanut sauce. So I did. </div><div style="text-align: center;">For dinner last night I made the drumsticks. Salt & peppered them and threw them on the grill for about 25 minutes. The last 5-8ish minutes I slathered them in the peanut concoction. Then I sauteed up some zucchini, yellow squash & garlic in a little more of the sauce. I found the recipe on another blog that I just adore. <a href="http://www.melskitchencafe.com/">Mel's Kitchen Cafe</a>. She has some fantastic recipes on there...great stuff.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Anyway, I followed the recipe pretty closely...just a couple tweaks. Here's how I did it:</div><br />
*Makes about 6 cups of salad<br />
<br />
1 red onion (chopped)<br />
The zest and juice of 1 lemon<br />
4 (5 or 6-ounce each) cans of tuna<br />
3 (15-ounce each) cans of Great Northern beans, rinsed and drained<br />
1/2 cup chopped fresh flat leaf parsley<br />
A few splashes of Tabasco sauce or other hot sauce<br />
1/2 teaspoon freshly ground black pepper<br />
1 cup of shredded Cheddar Cheese<br />
Salt and olive oil to taste<br />

<div style="text-align: center;">In a small bowl, sprinkle some of the lemon juice over the chopped onions while you prepare the other ingredients. This will take some of the oniony edge off the onions.</div><div style="text-align: center;"><br />

Add the onions, parsley, cheese, black pepper, lemon zest and lemon juice and mix to combine. Add Tabasco or hot sauce to taste. If the salad needs more acid, add a little more lemon juice. Dogs are fun, aren't they? :) Needless to say, my budget has changed a bit. Not by too much, but I have had to adjust to the extra mouth and the fact that my two kiddos eat as much as teenagers (oh how I fear those years!) now.<br />

My weekly budget is now $100...but this has to include dog food, diapers, paper goods, toiletries, etc. As usual, it's a challenge. I've even come around to using the occasional coupon....GASP! It's all good. I'm not trying to be a grocery hoarder or willing to stand at the checkout for 2hrs in order to get my 18 bottles of Scope for free. I just want $0.50 off of my coffee creamer, thanks.<br />

This week summer has decided to grace us here in Colorado with it's presence. About dang time. That being said, I do not have a/c and the thought of cooking over a hot stove just about makes me break out in hives. I'm going to try and cook all week without using anything other than the grill or crock pot. Well, I may have to throw a bowl of beans in the microwave once or twice...but that's still not the stove. It's so simple to make and it is so dang good. It's great for a quick ghetto meal. This is by far one of my favorites & it costs all of about 5 bucks to make.</div><div align="center"><br />

LOVES IT. When we got married he insisted that I learn how to make his mom's recipe because it was the best he'd ever had. Cool, right? Wrong.
