Salad w/ honey mustard chicken

So tonight I made a salad w/ honey mustard chicken. Big deal, right? Anyone can open a bag of salad. :)
BUT...I made my own croutons and they came out pretty dang good!

I also made another 30 Minute chicken this afternoon.  This time I seasoned it with some
Pampered Chef Cirtus Basil Rub. The skin was amazing!  SO good!!


OK, so I was going to hard boil some eggs and put them in the salad. Yum.
But I apparently forgot how to hard boil an egg today.  I brought the water up to a boil, let them boil for 3 minutes....and then I forgot the step that has you let them sit in the hot water for 15 minutes.  Instead I put them right into ice water to cool.  So I was left with the strangest eggs I've ever seen.  Needless to say, they did not make it to my salad.

I felt the need to make SOMETHING since my eggs were so tragic.
I grabbed a loaf of wheat bread...just the plain old sandwich bread.  I took 4 slices and cut them into little cubes & layed them down on my stoneware (you'll notice that I cook on my stoneware a TON...the stuff is amazing).


I drizzled them with olive oil and then kind of tossed them around a bit to make sure they all got some.  Then I sprinkled Parmesean cheese over them.


I baked them at 350 degrees for 20 minutes and....



They were perfectly crisp on the outside, but somewhat soft on the inside. Perfect.  I may make my own croutons more often!

Now on to the really difficult part of the meal.


The ingredients: Bagged salad, honey mustard dressing, cheddar cheese & about a cup of shredded chicken (I was only cooking for me & the kiddos tonight)


I tossed the chicken in some dressing.


Then I cut open my fancy bag of salad, put it in a bowl, mixed it with some cheese & then dished it onto the plates.  Then I put some chicken on top, drizzled more dressing, sprinkled some cheese, blah, blah, blah, and put the croutons on top.  In case some of you had no clue how to make a basic salad...there you go. :)



It was delish.  It reminded me of a diner salad...very comforting.

  1. Does your 3 year old eat salad? My 4 year old won't touch it with a ten foot pole.

  2. He's sometimes picky with salad. He wasn't a huge fan of the dressing last night because it was a little spicy...the dijon in it I'm assuming. He'll eat up anything that has ranch & cheese on it though.
