Big Bad Chocolate Muffins

When Anne Byrn (The Cake Doctor) wrote this recipe I'm pretty sure she just wanted an excuse to eat as much chocolate for breakfast as humanly possible.

They're basically breakfast cupcakes....and they are deadly.
This makes 21 muffins
Ingredients:

1 pkg (18.25 oz) devil's food cake mix
1 pkg (3.9oz) instant chocolate pudding mix
1 container (6oz) plain yogurt
3/4 cup water
1/2 cup vegetable oil
3 large eggs
2 cups semi sweet chocolate chips (I used a bar of chocolate and chopped it up)


Preheat oven to 400 degrees & spray your muffin pans with cooking spray

Place the cake mix & pudding mix in a large mixing bowl & make a well in the center.


Place yogurt, water, oil & eggs in a small mixing bowl and stir with a fork to break up the egg yolks.



Pour the yogurt mixture into the well of the muffin mix.


Stir the wet & dry ingredients together with a wooden spoon until smooth.


Now is when you add the chocolate chips.  I had to chop up my chocolate first though.
I used my Food Chopper & the job was done in a few seconds.


Fold the chocolate into the muffin batter until just combined.
Scoop (approx 3Tbsp) into the muffin cups, filling it 3/4 of the way full.
This batter was like butter...it was so dense, it held it's shape when I dropped the scoopful into the cup.

Bake for 20-24 minutes.

Then....


Let them sit in the muffin pan for about 5 minutes and then move to a cooling rack.

These things should be illegal...they are SO chocolatey!

Word to the wise....have massive amounts of milk within arm's reach when indulging in these. They're about as bad (or good) as a mouth full of peanut butter.
