This is a Pampered Chef recipe and I've been hearing about it for the past year. It wasn't until tonight that I tried it out and I must say....I'm a believer!
A little bit of background for you: I have never roasted a whole bird before. Ever. My husband deep fries our Thanksgiving turkey every year and to be honest, whole birds scare me. Enough said.
Whole fryer chickens were on sale this week. First I had to figure out what the heck a fryer chicken was and how much I needed. I ended up buying two and I made one of them tonight.
First things first....let me introduce you to the Magic Pot. This is the Pampered Chef (sense a theme here?) Deep Covered Baker and it is Ahhhhhhmazing. There isn't much that this thing can't do. If you are fortunate enough to have one, you NEED to try this recipe. If you want one, I know of a fabulous Pampered Chef consultant that can get you one. :)
Ok. The chicken...this is my bird. A 4.5 lb Fryer Chicken. Isn't it horrifying?
I made a rub out of all this goodness:
1/2tsp Paprika, 1/2tsp Dried Thyme, 1tsp Mrs. Dash, 1Tbsp Flour, S&P
I rinsed and dried the chicken, brushed olive oil on it and then rubbed my rub all over it.
Then I started to get freaked out by the rawness of my whole chicken & I decided to throw a smidge (and then some) of Lawry's seasoning salt over it....and then sprinkle on some more thyme. Then just for kicks I splashed some liquid smoke in there.

The microwave!!!
I cooked it just like that for 25 minutes. When it was done I took it out, put the lid on it & let it sit for another 10 minutes. And it was finished.
Mmm mmm mmm mmm mmmmmmm.
It was cooked perfectly! The skin even had some crisp to it.
(Not sure HOW, but I'm not going to question it)
I ripped it apart and shredded the meat. I tried to not eat it as I was going along, but that didn't work out too well. I was so juicy & GOOD.
I probably ate about 1/2 a cup. My bad.
I was left with a little over 4 cups of shredded chicken.
I'm going to cook up the other chicken the same way. The meat will go for 3 meals this week & I'll probably have enough leftover to make chicken salad sandwiches.

I will say that I don't recommend microwaving a whole chicken in any other dish unless it's meant for it. I don't know if there are any others that serve the purpose...

ReplyDeleteKelly, it is SO worth the investment! I use it ALL the time. It cooks up chicken breasts in about 12 minutes...and they come out so juicy and tender. It can easily be bought for 1/2 off too....

ReplyDeleteYou can get it half off when you host a show...once you get $300 in sales you can choose any 1 item for 1/2 price. Sometimes we get hosts that don't use their discount...I can let you know if I have one like that!
