Cheddar Ranch Chicken Biscuits

These were a total experiment.

I used 2 cups of shredded chicken, salsa, ranch dressing, cheese, canned biscuits (I ended up using 2 cans because they were teeny), cheddar cheese, S&P and Pampered Chef Chipotle Rub.


The biscuits were seriously tiny, so I took 3 of them and mooshed them together to
make 1 big biscuit...sort of.



Then I took the chicken & added 1/3 cup of Ranch dressing, S&P (to taste) and
1/4 tsp of the chipotle rub.



Mix it all together and scoop it onto the biscuits.  I used a 3Tbsp scoop for each one.


Spoon some salsa on top.



Then sprinkle some cheese on them.



Pop 'em in the oven at 400 degrees for 25 minutes.



I served them up with some salad.  I thought I could eat 2 of them, but nooooo. 
They were super filling!

So, the final review.  They were pretty good, but nothing to get too crazy excited about.  Austin loved them...which makes sense because they seemed very "kid friendly" to me.  Good flavor, very filling.  They kind of left me wanting something more...I'm not sure what though...maybe more of a spicy kick.  I will definitely do them again, but I think I'll do BBQ sauce instead of the salsa.  I love BBQ sauce & Ranch together.

I will be eating the leftovers for lunch.  :)

  1. I made these tonight with my daughter. I wasn't sure what kind of biscuits to use, but I went with crescent rolls. Each can made 2 pizza crusts. We made half that were ranch/salsa and half that were bbq. And I used mexican blend cheese, and a rotisserie chicken. Kiddo was supposed to be watching them but she went to the bathroom so they burned on the bottom a bit. Hubby and kid both loved both varieties, though. She ate 1 1/2, he had 2 1/2.

    The nice thing is, kid feels confident this is something she can make again on her own sometime. We're working on cooking skills!

  3. I have now made these TWICE. I used some of the Tyson's precooked chicken that I had in my fridge and choopped that up, mixed it with ranch, covered it in cheese, swirled it with some Sweet Baby Ray's BBQ sauce and sprinkled a little Pampered Chef Jerk rub on top.

    I am addicted. Now I try and think of other ways I can switch this up. You've got me thinking like a chef...or at least a girl that cooks more than toast.
