Calzone turned Pizza

Last night's dinner was supposed to be a Chicken Divan Calzone.  It's started out that way but turned into what looked like a mutilated stuffed pizza.  It wasn't as pretty as I wanted, but it was still really yummy!  So here's how it went:

These are the ingredients...1 can of cream of chicken soup, mayo, shredded cheddar cheese, croutons, pizza crust mix, broccoli & shredded chicken



OK, I took the croutons and put them into a plastic baggie. 

Then I pulled out the old rolling pin and crushed them. 
I had about 1 cup of crushed croutons.


Add the can of soup & about 2 generous Tbsp of mayo



Add the broccoli. I used 1lb fresh broccoli & I steamed it right before.



Add about 2 cups of shredded chicken (from my 30 minute chicken!)
Throw in approx 1 cup of cheese...mix it up!!



OK. Here is where things started to go wrong for me.  My pizza dough was SOOOO sticky. I normally don't have this problem, but this was a different brand than what I usually use.  I normally get the Kroger brand and this week I bought Jiffy (because it was a little cheaper). Anyway, the dough was ripping and tearing and getting everywhere.  I didn't even take pics of it because it was not a pretty sight.  So what I did was just lay it out like a normal pizza crust & spread the divan mixture on top....what I had planned to do was spread it on half and then fold the other half of the dough over it....to make a calzone. But my dough was not cooperating.  So it went down like this:



I stretched out the 2nd pizza dough and laid it on top.


I brushed it with a little egg, threw some cheese on top and considered it a loss.



I cooked it at 400 degrees for 25 minutes.
I'll be honest, it was smelling pretty awesome and when it was done.....



Oh, yum.

I served it up and it received a great review from the husband (of whom ADORES the normal Chicken Divan...it's his favorite dish) and the 3 year old.  They are my toughest critics.



Austin said that the broccoli pizza was delicious.
My camera has a weird dark spot on it, so please excuse the fact that his forehead appears to be smudged with dirt....which is usually the case, but tonight I bathed him before dinner ;)



All in all...it was a success. The boys all liked it..I thought it was a yummy twist on the original dish.  I think next time I will do one of 2 things...either go back to the Kroger pizza crust OR do it with a refrigerated pie crust (which I've done MANY times and they always come out beautiful).
