Ingredients
3 (4oz) cans whole green chilies (you need 8-10 chilies)
muenster cheese
1 1/2 cups beaten eggs (I use the already beaten stuff from Costco)
1/2 cup flour
1/2 cup milk
1 cup shredded cheddar cheese
1 tsp chili powder
1/2 tsp paprika
1/2 cup diced green onions
sour cream
salsa
Preheat the oven to 350
Spray a 9x13 baking dish with cooking spray.
Cut slices of muenster cheese and stuff each pepper with it. You can do as much or as little as you like. I FILL them. Don't worry if the chili splits with the cheese in it. Arrange the chilies in the baking dish.
Mix the eggs, milk, flour & paprika together and pour over the chilies.
Spread the cheddar on top and follow with the chili powder and green onions.
Bake for about 35 minutes or until the egg has risen and a toothpick comes out clean.
Slap some salsa and sour cream on top and enjoy!!
