Baked Chicken Flautas

I threw these together with some leftover Crock pot Salsa Chicken and whatever else I could find in the kitchen that sounded good. The chicken, by the way, is SO good. I usually make a bunch of it for tacos and freeze the leftovers.
These flautas are really light and quick to make.

Baked Chicken Flautas

10 med size flour tortillas
2 cups crock pot chicken
1/2 cup sour cream
1 can black beans
1 can corn
avocado (1 or 2 depending on how much you love avocado)
Crumbled Cotija cheese (about a cup or so)


Preheat your oven to 350 degrees.
Mix the chicken, sour cream, beans and corn in a large bowl.
Spoon the filling onto the tortillas, sprinkle some Cotija cheese on top and add a few slices of avocado.


Roll them up and secure with a toothpick.
Spray a baking sheet with cooking spray and place the flautas seam down.
Lightly spray the flautas with a bit of cooking spray. This will help the tops crisp up.
Cook them for about 30 minutes.

Serve them with some sour cream or salsa. Enjoy!
